The water pump circulates coolant between the engine and the radiator. Replacing it usually means draining coolant, removing the drive belt or the parts covering the pump, unbolting the pump and fitting the new one with a new gasket, O-ring or sealant, as the manufacturer specifies.

What changes the total.
Access is the biggest factor. A pump bolted to the front of the engine and driven by the accessory belt is a different job from one hidden behind the timing belt, or driven by the timing chain inside the engine, where much more usually has to come apart.
